Coral Mustang Releases First Tempranillo Wines

Coral Mustang Wines was founded by winemaker Penelope Gadd-Coster and her husband Frank Coster. We are dedicated to producing hand crafted, small lots of Tempranillo wines.







It is our sincere belief that Tempranillo will continue to rapidly gain popularity here in the US, and that California is an ideal area to grow these grapes. While we are located in Sonoma County, we are constantly searching out quality Tempranillo vineyards throughout California. Due to it’s rise in popularity several new plantings have been made in various appellations. As they mature we anticipate adding additional vineyard designates to our program.

We at Coral Mustang are pleased to announce the release of our first wines, the 2004 Tempranillo and 2005 Tempranillo Rose’. Both are vineyard designate “Vista Creek Vineyards” in the Paso Robles appellation.

2004 TEMPRANILLO
This wine is 100% Tempranillo from the Vista Creek Vineyard in Paso Robles. The grapes were harvested at 24.5° Brix, de-stemmed and lightly crushed. The must was then inoculated with yeast and fermented at 85° F until the right balance of tannins and fruit were attained. At near dryness the must was drained and pressed to barrels. The wine was left to finish its secondary malolactic fermentation and then racked off its gross lees.

This wine was left to age in 1-2 year old American and French oak barrels for 13 months- the time determined by tasting. The barrels were then racked to tank for the final blending. Bottled unrefined and unfiltered, this wine is showing the perfect balance between oak and fruit.

Tasting Notes:
Bright aromas of blueberry and cherry fruit are enhanced by Chinese five spice and soy. Leather, smoke, and vanilla round out the experience. The fruit aromas are carried through in the mouth. The perfect balance of acid to fruit along with the smooth structure maintains the varietal character of this wine. The taste lingers on the tongue with roasted nuts, vanilla, and blackberry.

Food recommendations:
The perfect match with Paella, roasted or grilled lamb and beef, and hard cheeses like Manchego and Asiago.

2005 TEMPRANILLO ROSE
This beautifully balanced Rosé is made from 100% Tempranillo grapes from the Vista Creek Vineyard in Paso Robles. Picked specifically for this wine at 22° degrees Brix, the grapes were de-stemmed and just barely crushed. The juice was monitored several times a day for color and at the middle of the third day it was deemed ready to bleed off the skins. This juice was fermented cold, 55° F, for almost three weeks. 20 percent of the wine went to barrels for lees stirring to bring another level of complexity to the wine.

Tasting Notes:
The beautiful color of this is complimented with the aromas of Rose, lime, and red raspberry. Slight creaminess balanced by acidity makes this the perfect warm weather and winter holiday wine. The lingering finish is fresh with citrus and berries.
Food recommendations:
The perfect wine to go with a picnic of roasted chicken or with summertime grilling of fish, especially salmon, and chicken. This versatile wine can go from your St. Patrick’s day corned beef to Memorial day picnic, to Thanksgiving turkey and ham.
